Roasted Pork Loin $17

We brine the Pork Loins for 2 days and are roasted. The loins are sliced into medallions and grilled, then laced with a light Pineapple

and Andouille Beurre Blanc; served with Pecan & Andouille Rice Pilaf and a side of vegetables.

Bud’s favorite version of Jambalaya of house-smoked duck and chicken, sautéed shrimp, our spicy Andouille and Tasso jambalaya base,
